Colonel Saab, the first London restaurant from award-winning Indian entrepreneur / hotelier Roop Partap Choudhary, opens in Holborn on Thursday 7 October. And it’s a family affair.

The Indian restaurant all day takes its name from Roop’s father, Manbeer, who was known as Colonel Saab during his time in the Indian Army. The room’s interior – based on the colors and patterns of the family’s dining room in the late ’70s and’ 80s – was designed in collaboration with Roop’s mother, Binny.

Colonel Saab is housed in the historic Holborn Town Hall on High Holborn, next to the Hoxton Hotel, and serves breakfast for dinner seven days a week with an Indian-style brunch menu served on weekends.

The food menu takes a contemporary twist on nostalgic memories of dishes, aromas and flavors, inspired by Roop’s many childhood journeys through India with his parents.

It has also been developed in partnership with Indian food writer and chef Karen Anand along with the restaurant’s resident head chef, Sohan Bhandari.

Signature breakfast dishes include caramel and banana paniyaram with jaggery sauce, hot, crispy South Indian bites served filled with banana and caramelized unrefined cane sugar syrup.

There is also the house special – the Indian fry which contains a Masala omelette, chili chicken sausage and curry baked beans served with toast and huge South Indian dosas and tiffns.

To welcome, Colonel Saab is offering 50 percent off the food bill from Thursday, October 7 to October 13. It is important to order.

Open Monday to Saturday, lunch 12.00-15.30, dinner 18.00-22.30, bar 12.00-12.30; 193 High Holborn, WC1V 7BD; colonelsaab.co.uk
